The grapes for this wine are hand-picked from 65-year-old grenache vines, and the wine is fermented in the village’s 100-year-old vats, using natural wild yeasts. It is clarified by filtering it through fine mesh and it is not barrel-aged. The only modern technique used, is to cool the must, prior to fermentation, to lower the alcohol level. This wine exhibits one of the most classic and historically correct expressions of the original taste of Spanish Garnacha.
