Olive Oil
The olives used in the Bird in Hand olive oil are not allowed to fall on the ground and become bruised. They are picked directly from the tree. Although one can get more oil by heating the olives during the pressing process, Bird in Hand chooses to cold-press the olives in order to maintain the fresh, grassy flavours. Contact with the air is minimized in order to prevent oxidation and the oil is sold in dark bottles to inhibit deterioration from light. Each bottle is labeled with the “bottling date”. The olive oils are sold fresh each year.

Olives
The olives are grown naturally with no artificial chemicals in either the pickling or seasoning process. They are allowed to ripen naturally on the tree, so receive no dye. Rather than adding caustic soda to remove bitterness, the olives are placed in fresh water which is changed every day for the first month, and twice a week for the next month. Vinegar is not used to preserve the olives. Instead these freshly washed olives are simply pasteurized in glass jars, with a little salt added.
